The reason for this is because you are signaling to your body that there is dirt in the wound. Your body will do everything it can to clean that wound and push everything out. For dirt and bacteria, this makes sense but also the jewel will be seen as foreign. The jewel will be rejected and the body will always win the battle. With an oral piercing, drinking alcohol is not recommended during healing because it slows down the healing process and can irritate the wound. What is still best to avoid is smoking, hugely acidic beverages and mouthwash with alcohol in it.
